We all know we should eat the rainbow, but how often do you get purple foods on your plate? (Nope, I'm not perfect when it comes to this either). So I'm always excited to make this red cabbage and get added nutrients I don't get often enough. I also love the tartness from the apple cider vinegar!
Bok Choy, a vegetable that deserves much more attention than it gets, is really easy to make and has some great qualities. While it comes with super nutrient dense leafy greens, it also has pieces of savory, juicy, slightly sweet stalk! All in one plant, what a bargain!
The name might not sound that appetizing, but it really doesn't get any healthier than this. This dish uses a lot of coconut oil (super healthy), which the cauliflower soaks up nicely, making it pretty hardy and filling. So if I had to design the perfect side dish, taking both nutrition and taste into account, this may very well be the winner.
I love trying a new kind of squash! What could possibly be more exciting? Have you tried delicata squash? It's probably my favorite. It's sweet like butternut squash, but you can eat the skin too so it's much easier to prepare, making a great little finger snack or side!
