Zingy Hearts of Palm Hummus
I must admit that I have missed hummus and other creamy dips since I got serious about eating for my health. Not anymore! I actually found this by accident, strolling the aisles of Costco and coming across "Hearts of Palm." It's a whole food, has no crazy additives, so I thought, why not? What another fun, exciting food to try! After googling around a bit, it became clear that these could be blended easily to make a good creamy dip. Even my "non-paleo" friends (which would be all of my friends) loved this! The texture is perfect and the raw garlic really gives it a great flavor with a nice zing.
26 oz jar hearts of palm
3 garlic cloves
zest of 1 lemon
1/4 cup extra virgin olive oil
salt and pepper to taste (can try 1/8 tsp salt and add more if needed)
carrots, celery or other dipping devices
- Add everything to a blender.
- Blend! I recommend doing 3-5 second pulses until desired texture is reached
