This is my FAVORITE meal to have on hand. Loads of vegetables, great protein and fat, all in one EASY meal. Not to mention, it's delicious and EASY to reheat for leftovers. I've tested this on the PICKIEST of eaters in my family and all approve!
I must admit that this recipe was actually a mistake - I had every intention of just making chili, not chili soup. However, like I always say, you can rarely go wrong with good ingredients and this recipe is a testament to that! The result was more of a hearty soup: delicious, nutritious and good for the soul.
If you are still afraid of saturated fat and cholesterol (*cough cough* you shouldn't be), you might want to close your eyes. These have been a staple for me and are always a major crowd pleaser. Seriously, everybody loves these. What's even better, is that they are super easy to make!
